Abridged overview: Cain's backstory, as told by him, is remarkably inconsistent. He was often able to talk his way out of rough encounters with angry gangs, angry ex-business partners, and angry civil authorities. Fleeing to Ul'dah was part of his decision to "reinvent" himself as an adventurer. He wasn't truly turning over a new leaf, just trying to lie low for a while, with a new identity.
To this day, he still finds time to trick people out of their money, usually with rigged games of chance, bad bets, and the like. He's ever practiced at lying directly or by admission. His moral fabric remains questionable in most areas. He often conflicts with staunchly lawful, justice-oriented types about how to approach a problem. As a result, he can come across as self-centered, overly confident, and dismissive of an ally's opinions. He isn't an evil person--he just takes self-reliance and a willingness to survive to an unsavory place. Hoarding a great deal of money makes him feel less vulnerable in an unpredictable world.
Being the Warrior of Light, and all that it entails, is at odds with Cain's inherent sense of self on a deep, deep level. He has struggled with his role as the people's champion versus being a low-key nihilist, anarchist, and bitter misanthrope. But the wonderful, respectable people he has met throughout his journey have decidedly influenced him for the better. He does want to figure out how to be a true hero, despite his tendency to backslide at times. It has even given him a bit of an inferiority complex, where he doesn't know if he will ever be as good as the Scions and other icons.
When Cain first arrived in Ishgard, he took an immediate interest in the astrologian profession for two reasons: 1) he was curious about healing magic after serving as a tank, and 2) glimpsing the future might be good for business. He didn't believe the healing role would mesh with him, but his aptitude was surprisingly high from the start. In general, Cain is a jack-of-all-trades due to his belief in self-reliance above all else. He enjoys reading and learning about various things, making him a kind of polymath, with the ability to converse with anyone about some subject or another. He tends to seem worldly and personable at first blush, which was important when he was still a con artist. He could pass himself off as a guild master, a chocobo breeder, a fishmonger, a tax collector, and many more personas. As a result of efforts to free Doma and Ala Mhigo from the Garlean Empire, Cain has gone through the wringer of tragedy, triumph, and soul-crushing plot twists. He has become more hardened as a person, more willing to make those tough decisions as a leader, but at the same time he's more disgusted with any perceived hypocrisy within the people he meets. He's also really fucking tired of people he knows dying in horrible ways.
The Mysterious Voice, with its tendency to steal the souls of his allies, has cursed Cain with anxiety, depression, a growing sense of apathy, and an untimely encore of nihilism. It could be argued that much of the progress he has made, if not all of it, is steadily being undone. As his mental state deteriorates, what happens next remains to be seen.
